Quick Buffalo Chicken and Yogurt Dip

As if my love affair with Target wasn’t strong enough, over the past couple years I have found that they have great pre-made basics for meals- which is how this easy dinner first came about. I would pick up their shredded chicken, add some form of a sauce and some veggies to it and call it a day. This version has always been one of my favorites and takes about 10 minutes to pull together.

Recipe

This recipe can be prepped ahead of time and kept in the fridge for 3-4 days before the chicken begins to dry out

4-6oz of your favorite shredded chicken breast (If you want to buy pre-made, Target’s Archer Farm brand has a great shredded chicken option found in their fridge aisle)

1/4 cup your favorite Buffalo Chicken sauce (I like Frank’s Original Buffalo Sauce)

2/3 cup greek yogurt

1 tsp each: dill, oregano, garlic powder, paprika

Water

Warm up the shredded chicken in a skillet on the stove if not already warm. Add the buffalo sauce and toss well. While the chicken is warming, make the yogurt sauce combining all ingredients. Add water 1 tsp at a time if you would like the mixture to be a little thinner. I generally add 2 tsp.

Serve in lettuce cups or with your favorite veggies.
